STRETCH THOSE RECIPES
This was written in response to a cake-baking website I used to belong to and Mary Lou had written to say that her recipes seemed too short. This was my way of helping her to stretch those recipes. ~*~*~*~*~*~*~*~*~*~*~*~*~ Mary Lou, I had an idea how you can s-t-r-e-t-c-h your recipes. What you do is list the ingredients for the particular item you are making and at the end of the list, add a bottle of wine, or some favourite tipple - in my case it would be Baileys Irish Cream liqueur. For example : A Victorian sandwich 6 oz self raising flour 6 oz caster sugar 6 oz margarine 3 medium size eggs Bottle of Baileys 1. Cream margarine and caster sugar together until light and fluffy. 2. Fold in sieved flour and mix well. 3. Have a swig of Baileys; lick lips, savouring the flavour. 4. Break eggs into a bowl, and beat the living daylights out of them. 5. Have another swig of Baileys. 6. Add beaten (cowering) eggs to mixture and fold in gently. 7. Have another swig of Baileys. 8. Divide mixture between 2 8" sandwich tins greased and lightly floured. 9. Smooth mixture over to ensure no air bubbles. 10. Put into middle of pre-heated oven at Gas mark 5 for 25 minutes until lightly golden on top. 11. Make sure you put timer on. 12. Lick out the bowl and have a large glass of Baileys. 13. Start giggling while preparing the butter cream filling. 14. Cream together 4 oz. icing sugar with 6 oz. of margarine until light and fluffy. 15. Take ginormous swig of Baileys. 16. Add a few drops of vanilla essence - not too much. 17. Add more icing sugar to compensate for the vanilla overdose. 18. Have another large swig of Baileys. 19. Stick finger in butter cream to taste. 20. Mmmmmmmmmmmmmmmn, it’s good. Get dessertspoon from drawer and scoop some more. 21. Have another swig of Baileys. 22. Ping! Timer goes off. 23. Peer into the oven to see if cake has risen. 24. Disappointingly drain dregs of Baileys. 25. Lightly prod with finger to see if springy to touch. 26. Leave to cool for ten minutes before removing from tins and placing on wire rack to cool. 27. Go down to the off licence to buy another bottle of Baileys. 28. When cool, sandwich
together with butter cream. 30. Drink entire bottle sitting on kitchen floor eating cake. 31. Feel slightly sick. 32. Spend entire evening in the bathroom throwing up analysing strange colour combination of Baileys and sandwich cake. You see Mary Lou - how your recipe has now stretched!!!!! Give it a try!!!
